VEGGIE DALIYA PULAV/UPMA|LOCKDOWN SPECIAL|ONE POT MEAL|दलिया

Hey Foodies, During this 21 day Lockdown in India, we struggling to get fresh air and some break from home (self) quarantine. This Veggie Daliya Upma or Pulav is perfect one pot meal which can be made easily and quickly and customised as per your taste and availability of ingredients. The veggies can be substituted or replaced completely and the consistency can be changed to more drier Upma or Pulao style or more liquid as in Khichdi. Make it your way. Stay Healthy Stay Safe.


RECIPE CARD:

Serves: 2-3 for Lunch/Dinner or 4-5 for breakfast snacks

INGREDIENTS: 1/2 cup Broken (Bulgur) Wheat / Dalia 1 tbsp Oil/Ghee 1/2 tsp Mustard Seeds / Rai 1/2 tsp Cumin Seeds / Jeera 1/4 tsp Asafoetida / Hing 1 Green Chilli / Hari Mirch, chopped Few Curry Leaves / Kari Patta 1 medium Onion / Kanda, chopped 1 tsp Ginger-Garlic paste / Adrak-Lehsan 1 medium Tomato / Tamatar 1 tsp Coriander-Cumin / Dhania-Jeera Powder

1 tsp Red Chilli / Lal Mirch Powder Salt / Namak as per taste 2 cups Mixed Vegetables: Peas / Vatana Cauliflower / Gobhi Potato / Aalu Carrot / Gajar 1 1/2 to 2 cups Water / Paani

Chopped Coriander /Dhania Leaves


METHOD:

1. Wash and soak Dalia / Broken Wheat for 15-20 minutes.

2. Chop onion,tomato, green chillies & coriander leaves.

3. Cut cauliflower into florets.

4. Dice Potatoes & Carrots.

5. Shell Green Peas.

6. You may add other vegetables of your choice like French Beans, Corn, Brinjal, Yam, Raw Banana, Sweet Potato or Ivy Gourd / Tendli. 7. Heat Oil / Ghee in a Wok / Kadhai.

8. Add mustard seeds, cumin seeds, asafoetida, curry leaves & green chillies & saute.

9. Add onion and cook till translucent.

10. Add ginger-garlic paste and tomatoes along with spices & salt. Let the tomates cook properly & release oil from sides.

11. Add cut vegetables and soaked daliya. Add water as per desired consistency. Less water will yield a fluffier Upma or Pulav texture whereas more water will yield a mushy Khichdi like texture.

12. Cook covered for 12-15 mins or till dalia & vegetables are cooked.

13. Garnish with coriander leaves & serve hot.
